Beef Steak Tomato Salad with a Red Wine Vinaigrette
Served with a Certified Angus Beef strip loin & topped with St. Pete’s Blue Cheese crumbles
Ingredients:
- 2 large garden ripe tomatoes
- Shaved red onion
- Plump Chef Original Shake
- Red wine vinaigrette (recipe below)
- Mixed greens
- St. Pete’s Blue Cheese crumbles
- Certified Angus Beef New York strip loin
- ½ shallot minced
- ½ cup red wine vinegar
- 1 Tbsp fresh thyme
- ½ Tbsp Dijon mustard
- 1 ½ cups olive oil
- Make the red wine vinaigrette
- Slice the tomatoes in ½ inch slices
- Shave the red onion
- Crumble the blue cheese
- Toss the mixed greens with some red wine vinaigrette
- Arrange the greens and sliced tomato on plate
- Season the tomato with Plump Chef Original shake.
- Garnish with shaved red onion and blue cheese crumbles
- Dress with more red wine vinaigrette to taste
- Season the steak on both sides with Plump Chef original shake and grill steak to desired temperature. Let rest for 5 minutes before slicing and plating.
